Sweet Potato Fries

2 large sweet potatoes
2 Tbsp olive oil
Salt and pepper to taste

Preheat oven to 450 degrees F. Line baking sheet with parchment paper or aluminum foil. In large bowl place 2 large sweet potatoes, peeled/unpeeled, and cut into ¼- to ½-inch thick fries. Add 2 Tbsp olive oil, salt and pepper to taste, and toss to coat evenly. Arrange in single layer and bake for 20 minutes on lower rack. Transfer on upper layer rack for another 5–10 minutes longer until crispy.

  • You can grate cauliflower or coarsely chop in food processor. Steamed or blanched it makes a great rice substitute.
