INGREDIENTS
1 ½ cup coconut milk or any other dairy-free milk
½ cup chia seeds
1-2 Tbsp monk fruit sugar
1 tsp vanilla extract
Topping: Any fresh fruit of choice
In a bowl combine all the ingredients and stir to combine together.
Cover and refrigerate for at least 4 hours till thick or leave overnight. If mixture is too thin you may add more chia seeds.
Transfer to a mason jar or bowl and top or layer with your favorite fruit.
Chia pudding will keep in the refrigerator for up to 5 days.
